Service guide
Pure matcha (usucha): Scoop 2 g into the chawan, add ~70 ml of water at 80 °C max (boiling water scorches matcha), whisk in a brisk M-motion with the chasen until a fine foam forms.
Matcha latte: Whisk 2–3 g into a splash of hot water (≤80 °C), then add 180 ml of frothed milk.
Iced matcha: Whisk the paste, pour over cold milk and ice.
