Three days
in Paris

One weekend, 22 to 24 August. A crawl through the city's hippest coffee bars, from a matcha house in the Marais to a seventies latte club at Bastille. This is what the counters are pouring now, and what your customers will ask for next.

Five signals from the field

Different bars, different menus, the same currents underneath.

Matcha turned into theatre

Kura-ge whisks every bowl to order and the queue is Instagram famous. Ceremonial grade is printed on menus like a wine appellation. Matcha is no longer a flavour, it is an experience people queue for and pay extra to have.

The flavour map moved east

Ube, hojicha, pandan, yuzu, black sesame, white miso. The most exciting menus in Paris read like a Tokyo dessert counter, and the trend press says the same wave is rolling across the UK and US.

Functional is the new premium

Protein boosts at Starbucks, collagen add-ins at Café Kitsuné, golden milk as a fixture. When the drink does something for you, guests happily pay more for it.

Chai went craft

Concentrates are replacing powders. Pause Café, an ordinary corner bistro, brews its own chai concentrate overnight from sticky chai. When the neighbourhood bistro starts doing that, the trend has fully landed.

Colour is the marketing

Purple ube, pink hibiscus, layered strawberry matcha, blue spirulina. The drink is designed for the feed first, and the feed fills the room. A striking colour is free advertising every time a phone comes out.

The palette of Paris

Eight colours kept coming back, cup after cup. Together they are the look of autumn 2026.

Matcha

Still the queen. Served as glacé, mousse, tonic, bubble tea and ceremonial ritual.

Hojicha

The roasted little sister, still climbing. Searches for hojicha latte are up 173 percent.

Ube

The purple yam on half the menus we saw. Sweet, nutty and caffeine free.

Pandan

Vanilla, coconut and toasted rice in one green leaf. Named a next big coffee flavour.

Hibiscus

Tart, floral and naturally vivid pink. The infusion behind the prettiest iced lattes.

Turmeric

Golden milk has held its place on the card for years, and is now going iced.

Pistachio

The breakout flavour of 2026, carried by the Dubai chocolate wave.

Black sesame

Charcoal grey, toasty and adult. The sophisticated end of the dessert latte.

Kura-ge

Le Marais

A matcha house, not a coffee bar. Pesticide-free Japanese matcha and hojicha, every bowl whisked to order, and a line out the door that Instagram built. The clearest proof that matcha is now an experience economy.

Café Kitsuné

Palais-Royal

The fashion label's café runs a flavour lab: white matcha latte with white chocolate, yuzu and honey latte, black sesame choco, pistachio latte, white miso praline, yuzu matcha fizz. Collagen as an add-in, and a laptop-free room.

Latte Club

Bastille

Seventies interior, house ceramics, and matcha in every direction: pistachio, peanut butter, rose, iced yuzu, iced cherry, lychee matcha tonic.

The Coffee

Le Marais

Brazilian-born, Japanese-minimal, cashless kiosks. Tiramisu latte hot or iced, and a pink iced latte on hibiscus infusion. Dessert in a cup captures the pastry spend without the pastry case.

Matcha glacé with banana, matcha glacé with blueberries and ube, matcha mousse on coconut water, coffee glacé under thick cream foam.

Signature drinks

The Baby Got Back latte: hot chocolate with peanut butter, coffee and milk. Also hojicha latte, strawberry milk, and pumpkin spice already on the board in August.

Pause Café

Bastille

A classic corner bistro that brews its own chai concentrate overnight from sticky chai. Premium chai concentrates like Say When's masala are spreading through grab-and-go too.

And everywhere

Across the city

Protein-boosted drinks at Starbucks. Ube on menu after menu. Espresso poured over orange juice. And a full milk choice with flavoured cold foam is simply expected now, not a novelty.

The receipts

Menu boards photographed on the trip. Matcha sells for a euro more than cappuccino, oat milk and fruit pearls are priced as upgrades, and the trend drinks on these boards are a scoop or a pump away from the range on the next slide.

Pandan

Would slot naturally into the superfood latte range next to ube. A syrup or latte powder covers it.

Yuzu

One yuzu syrup covers the citrus tonics and yuzu matcha serves seen all over the city.

Black sesame

A latte powder or sauce would complete the Asian flavour set alongside hojicha and matcha.

Tapioca pearls

The frappé and concentrate lines are already boba-ready. Pearls alone would unlock a bubble tea menu.

Collagen

Pairs with the High Protein Blend for a functional add-in shelf.

Miso praline

Sweet and savoury is having a moment. A miso caramel sauce would extend the gourmet line.

Tiramisu

Dessert as a drink. A tiramisu syrup or frappé would sit naturally next to Cookies and Cream.
