  • VAT is 9%. The Belastingdienst applies it to food and non-alcoholic drink in horeca, eat-in and takeaway alike, and it did not change in 2026. Only accommodation went to 21%. Dutch prices are shown including VAT by law, so we divide your menu price by 1.09.
  • Doses and yields come off the Chai Wallah product pages: chai 10 g a glass and 100 servings a kilo; chai concentrate 20 ml a serving and 35 a bottle; ube concentrate 50 a bottle; ceremonial matcha 2 g a latte.
  • Milk from Dutch foodservice wholesale, August 2026: dairy about € 0.90 to € 2.00 a litre, barista oat € 1.80 to € 2.50.
  • The European medians come from 20 speciality cafe menus across 15 countries, read straight off each venue's own menu page in August 2026, never a delivery platform. Each menu had to list a cappuccino and a matcha latte together, so comparing them cancels out city, rent and venue tier. Median cappuccino € 4.11, matcha € 5.40, chai € 4.70.
  • The spread between drinks. Matcha runs a median € 1.00 over the cappuccino on the same board and chai € 0.62, so chai is set 38 cents under matcha here. Ube, pitaya and London Fog have no surveyed median: ube is priced level with matcha, brewed chai 20 cents under, London Fog with the chai, and pitaya 30 cents over as a novelty. Those four are positioning, not measurement.

Estimated, so treat with care

  • Ube here is the 750 ml concentrate, which states 50 servings a bottle, so that one is solid. The 225 g ube mix only says "more than 20 servings" and is not used.
  • Pitaya mix publishes no dose or yield at all. We assume 20 servings a bag. Confirm it before quoting.
  • Coffee is your own input, not a Chai Wallah price.

Chai Wallah prices exclude VAT and were checked on 27 August 2026. Volume discounts are not applied, so three tins of ceremonial matcha come out cheaper still.
